It’s probably because they are harvested at the peak of ripeness and dried naturally in the sun. This allows the tomatoes to retain their nutritional value while intensifying their taste. These wrinkly tomatoes work anywhere their young fresh counterparts do. Dice them into a fresh salad, toss them into your wraps, or work them into savoury muffins.
